Crockpot Vegetable Soup


Vegetable Soup

2 Cups of broccoli

4 to 5 large carrots sliced

1 cup green beans

1 onion

1 to 2 bell peppers

2 zucchini

1 clove garlic

2 cans of diced tomatoes ( I prefer to use the ones that have basil in it)

1 starch (sweet tomatoes, can of chickpeas, kidney beans, etc.)

1 lb ground turkey (optional)

32 oz vegetable broth or broth of your choice

2 bay leaves

1 tsp basil

salt and pepper to taste

After cutting up all the vegetables put them in the crock pot and set it on high for about 2 hours or until the carrots are fully cooked. Its as simple as that! The nice thing about this recipe is that its all up to you. Put all your favorite vegetables into the pot and in no time you will have a delicious low calorie meal.
