Gluten Free Oatmeal Cookies
2/5 cup almond butter
1/4 cup honey or maple syrup
1/4 cup xylitol
1 eggs
1/2 tsp vanilla extract
1/2 cup almond flour
1/6 oat flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 2/5 cup rolled oats
1/2 cup of raisins
Preheat the oven to 375 degrees Fahrenheit
Add the almond butter, honey, xylitol, eggs, and vanilla extract into a large mixing bowl and mix until the batter is smooth and thoroughly blended. Then add the rest of the ingredients and mix until it forms a batter like consistency.
Spray your tray so the cookies don't stick and put it in the oven for 9 to 12 mins or until the cookie get light brown. Then let it cool and enjoy with a glass of almond milk!
Note: Now with using this recipe I found that the cookies tend to crumble at times but are still delicious and make for a great dessert/ snack.
